This No-Bake Energy Bites recipe is a healthy, easy and great way to get creative with camping snacks. Because they don’t have to be baked, you can make them in minutes and, like trail mix, you can adapt the recipe to add in something you prefer over some of the ingredients…try dried fruit, crushed cereal, even nuts. No-Bake Energy Bites (makes 20-25 balls)
- 1 cup (dry) oatmeal
- 2/3 cup toasted coconut flakes
- 1/2 cup peanut butter
- 1/2 cup ground flaxseed or wheat germ
- 1/2 cup chocolate chips (optional)
- 1/3 cup honey
- 1 tsp. vanilla
Stir all ingredients together in a medium-sized bowl – mix thoroughly. Place mixture in refrigerator for half an hour. Once it is chilled, roll into balls – about 1” in diameter. Refrigerator the No-Bake Energy Bites, storing in an airtight container for up to one week. Enjoy!
